Souvlaki is a delicious grilled skewer of meat dish. I make mine with pork tenderloin and it comes out fantastic!
Skewers
2 lbs Pork Tenderloin
1/2 c. Fresh squeezed Lemon Juice
2 Tbsp red wine vinegar
2 Tbsp fresh oregano
1 tsp dried thyme
6 cloves garlic
3 Tbsp olive oil
Salt to taste
Pepper to taste
1 large red onion (for skewering)
If using bamboo skewers – soak for 45 min to 1 hr
Trim fat and silver skin from tenderloin. Split tenderloin lengthwise, then cut into cubes.
Place pork into gallon ziplock bag.
Place remaining ingredients (except for red onion) into food processor. Pulse until chopped and well blended. Poor marinade over pork and seal ziplock bag.
Refrigerate and let marinate 1-3 hours
Chop red onion into similar sized chunks as pork
Skewer alternation pork chunks and red onion.
Poor leftover marinade into bowl for basting during grilling.
Over a med-low direct heat, grill skewers turning and basting frequently till caramelized.
