50ml of Bombay Sunset
15/20ml of house made winter spice sugar syrup (see notes for recipe) (to make a 1:1 syrup)
Half a lime squeezed
Topped with FeverTree Spanish clementine tonic water
X2 dashes of angostura bitters
Orange peel or disc garnish
Star anise
Highball
Pour 15 or 20ml of the sugar syrup depending on your preference for sweetness into the bottom of a highball glass
Squeeze half of a lime (should be about 15ml of juice)
Pour 50ml of Bombay Sunset
Quick stir
Fill the glass with ice
Top with chilled Spanish clementine tonic
Spritz the orange disc over the drink and pop in
Place the star of anise
Dash 2 drops of angostura bitters on top of the drink
Recipe for the Winter Spice Sugar Syrup
500ml of warm water
500g of caster sugar
5 gently crushed cardamon pods
10 cloves
2 cinnamon sticks
10 grains of paradise or cumin
Combine in a small sauce pan, simmer for 10-15 min. Cool, and store for use.
