This is a wonderful and fast marinade for fish or shrimp. For my Paleo plate, I serve the grilled marinated fish over top shredded cabbage along with a bright salsa. I do remember the days where it would be piled on a tortilla as a fish taco…but I don't miss the tortilla at all anymore. Enjoy!
3 cloves garlic
1 cup packed cilantro leaves
2 limes (zested)
2 teaspoons ground cumin
1 1/2 teaspoons Kosher Salt
1 teaspoon freshly ground black pepper
1/4 cup tequila
Place it all into a small food processor or blender.
Pulse till uniform and well combined
Using a gallon zip-lock bag, pour over seafood and marinate 15-30 min.
Note - due to the high amount of acid, this does not keep well for the following day.
