Risotto is a warm and wonderful dish which traditionally takes time and attention to create this creamy bowl of goodness. This recipe inspired by Delish's Instant Pot Risotto makes an amazing risotto with ease making it a goto weeknight meal.
4 c. (32 oz) chicken broth
1 medium onion, finely chopped
3 cloves garlic, minced or grated
2 tbsp. butter
1 tbsp. fresh thyme leaves
2 c. arborio rice (sushi rice works too)
1/4 c. dry white wine
3/4 c. freshly grated Parmesan
Salt & Freshly ground black pepper
Heat broth over medium heat in a medium saucepan.
Set Instant Pot to Sauté function and melt butter.
Add onion and cook until soft, 5 minutes, then add garlic and thyme and cook until fragrant, 1 minute more.
Add rice and stir until toasted, 2 minutes.
Deglaze pot with wine. Cook until most of wine is absorbed, then turn Sauté function off.
Add warm broth and place lid on Instant Pot. Set to Manual, High and set time for 5 minutes.
Turn valve to quick release. Remove lid and stir in Parmesan. Season with salt and pepper.
Keep the 4 cups of broth to 2 cups of rice, but feel free to switch up the flavors with beef or vegetable stock.
Be creative. Add diced seasonal vegetables. Add a protein like shrimp, chicken or beef.
Beef stock risotto with mushrooms and asparagus topped with braised short ribs is as decadent as it gets.
