This is an easy yet yummy take on Buffalo Chicken. Great warm served in a soft taco with toppings, or cold on toast as a sandwich. Easy to adjust how spicy you like it as well.
3-4 Cooked chicken breasts, shredded (~ 1lbs or 500g)
1 package cream cheese (softened)
2+ tablespoons Hot Sauce (I like Franks or Texas Pete's)
3+ green onions (thinly sliced)
1-2 celery stalks (chopped into small bits) (extra for garnish)
1/3 - 1/2 cup crumbled blue cheese (extra for garnish)
Preheat the oven to 300 degrees F (150 C).
In a bowl, mix softened cream cheese and 2+ tablespoons of hot sauce.
Stir in sliced green onions and diced celery
Mix in the shredded cooked chicken
Add blue cheese crumbles and mix gently
Transfer to an oven safe pan and spread in a even layer
Bake for 15-20 min to let mixture bubble and combine
Serve warm on soft tacos with diced celery, red onion, and extra blue cheese
For an appetizer or for a party, serve warm on toasts with celery and blue cheese garnish
Serve cool on toast for a great sandwich
