This is closely related to the Seychelles Seafood marinade, but cooked down and is a condiment of sorts. Once you try it with grilled fish, it will become a must have.
2 Tbsp olive oil
2 large onions.
2 Tbsp garlic (minced)
2 Tbsp fresh ginger (peeled and minced fine)
Salt and Pepper to taste
14 oz can chopped tomatoes (remainder if you made the marinade)
1 Tbsp coconut aminos (or soy sauce for non-paleo)
Juice of a lime
Thinly slice the onions in rings or half moons.
Separate at sauté over medium heat with the olive oil until soft and transparent.
Season with salt and pepper.
In a small food processor, mince up the garlic and ginger with a little olive oil, then add to the pan with the onions.
Sauté for a few minutes, but do not burn the garlic.
Add the tomatoes, coconut aminos and lime juice and stir to combine.
Reduce heat to med, med-low and simmer till reduced and thick.
Serve in a small bowl on the table…but be warned, it won't last long.
