This is a simple scampi sauce I use with shrimp, chicken, or plain with pasta.
4 Tbsp olive oil
4 tbsp butter
6-8 cloves garlic, minced small. About 3 tbsp
1/4 - 1/2 tsp red pepper flake
2 tsp salt
1 tsp ground pepper
Zest from 1 lemon
1/4 - 1/2 cup fresh lemon juice (see note at bottom)
1/2 cup fresh chopped parsley
If making to pour over - use small or medium sauce pot. If cooking shrimp in sauce, use a medium pan.
Heat oil and Butter over medium heat till melted and combined
Add minced garlic, salt, pepper, and red pepper flakes, cook 2-3 min, don't let garlic burn.
Remove from heat, stir in lemon zest and lemon juice.
Sauce can stand till you are ready to serve.
Toss with linguini or your pasta of choice along with the fresh parsley, top with generous amount of grated parmesan cheese.
Feel free to add cooked shrimp or roasted chicken
I've gotten away with a single zested lemon then juiced it...not as lemony, but works in a pinch.
I can make a big batch, and broil the shrimp or roast then shred chicken, then combine at the end with pasta.
Smaller batches, you can make the scampi sauce in a medium saute pan and cook the shrimp in the sauce between steps 3 & 4.
