This has become a go-to raw vegetable salad for the family. Overall, almost any vegetable works, but I typically hit one of my farmers markets and grab the freshest ingredients of the moment. I end up serving my protein dressed up as needed on a salad plate, and serve a healthy potion of this salad in a side bowl. The kids devour this regularly, and I love the high nutrient content of all the raw vegetables. Enjoy!
1-2 zucchini
1-2 yellow squash
1-2 bell pepper (go for color when you can)
1-2 cucumber (peel/no peel your decision) (I remove the seeds)
1 red onion
1-2 ripe tomatoes
.5-1 cup chopped flat leaf parsley
2 lemons (juiced)
2-3 Tbsp good Olive Oil
Salt and pepper to taste
1 tsp Sumac (optional, but worth it)
Chop all vegetables into a 1/4″ dice and place into a bowl
Mince fresh parsley and add to bowl.
Dress with fresh lemon juice and olive oil
Season with salt, pepper and sumac.
Stir to combine. Refrigerate and let flavors combine for 1 hr. Stir periodically. Serve and enjoy!
Any fresh vegetable works and I've included carrots, celery, and many types of peppers given the season and the availability. Leafy stuff works less well.
This salad holds well for a day, so I make a large batch and serve it back to back nights.
