Simple but delicious Black Beans which you can eat on their own or serve over rice. I will often oven roast some chicken with fajita spices and eat it along with the rice and beans.
1 medium to large onion (I prefer white)
1 red bell pepper (optional)
1 Jalapeño (optional)
5-8 cloves garlic - diced small
2 cans black beans (do not drain)
1/4 cup Olive Oil
Salt and pepper
2 tbls dried oregano
1 tsp cumin
1/2 tsp chili powder
1/4 tsp cayenne pepper (optional)
1/4 cup white vinegar
Directions:
Dice onion and bell pepper and Jalapeño (if using) - add to a medium pot with the olive oil.
Add salt and pepper to taste
Saute over medium high heat until clear and soft.
Add garlic, oregano, cumin, and chili powder. Stir and cook 2-3 but don't burn the garlic.
Add both cans of black beans with liquid from the cans, stir to combine and bring up to a simmer.
Add the vinegar, stir and simmer for 30-40 min.

Top with fresh cilantro and queso fresca to give it a little more flare and flavor.
